After her traineeship, An van Eeckhoutte was mainly involved in handling cases for the court of cassation. She has been assisting Willy van Eeckhoutte for the past fifteen years with impartial advice in the various areas of law - with the exception of criminal law - and in the subsequent drafting of petitions-appeals to the court of cassation. She also carries out preparatory work for the drafting of a response for the defendant in order to refute the grounds for cassation brought against the latter.

She has a special interest in civil law and is also a mediator and lecturer at Hogeschool Gent.
